BOSNIA & HERZEGOVINA

Sataras is a traditional dish from the Balkan region, that every country in the Balkans is claiming as its own. It is not entirely certain where this dish originated, but most likely it came from Hungary, through Croatia, region Baranja to be exact, and from there it spread all the way to Turkey.

It’s a simple vegetable stew and various similar dishes can be found throughout Central and Southern Europe, like Lecsó from Hungary or Ratatouille from France. The recipe and ingredients for Sataras differ from country to country, almost on a household level – usually, it’s the family recipe that is passed down from generation to generation. The one that we make is my aunt’s recipe, and personally, it’s my favorite, always reminding me of home. The ingredients we used are onion, peppers, carrots, potatoes and fresh tomatoes. It can be served as an appetizer warm or cold, or as a main dish with rice or potatoes.

It is a very simple dish to make but full of warm flavors, bringing joy and happiness to anyone who tastes it. It is a dish that can be prepared for any occasion, in summer or winter. We prepared it as a main dish, alongside vegan mashed potatoes (see below).

RECIPE FOR 4 SERVINGS

INGRIDIENTS

For the Sataras:

  1 onion, chopped 

 2 smaller potatoes, peeled and cut into 1,5cm cubes

 3 medium sized carrots, cut into larger pieces

 1 red bell pepper, cut into larger pieces

 1 yellow bell pepper, cut into larger pieces

3 medium sized fresh tomatoes

2 Tbsp olive oil

500ml water

1 tsp salt, more or less to taste

1/2 tsp brown sugar*

For the Mashed Potatos:

700g potatoes, peeled and cut into larger cubes

 100ml planet based yogurt

40g vegan butter

 1 tsp salt

  1. Put tomatoes in a bowl of warm water and put aside.**
  2. Heat olive oil in a larger pot over medium heat. Add the onions and cook for a few minutes until they are soft and translucent, stirring them occasionally.
  3. Add potatoes and carrots and half of the water. Cook everything for a few minutes, stirring it occasionally.
  4. Add bell peppers and the rest of water and cook everything for up to an hour over low to medium heat.***
  5. Close to the end of cooking, peel and cut tomatoes into larger pieces and add them together with salt and brown sugar to the stew. Cook everything for another few minutes, stirring it occasionally.
  6. In the meantime prepare the mashed potatoes – cook potatoes to the point of falling apart, rinse them and transfer into a larger bowl. While the potatoes are still hot, add vegan butter and plant based milk and mash everything together. 
  7. Serve satars warm or cold.
  8. Prijatno!

NOTE!

* Sugar reduces the acidity of the fresh tomatoes.
** We recommend peeling the tomatoes so as to get that smooth, silky texture – warm water will soften the skin of tomatoes and make them easier to peel.
*** The exact cooking time depends on the desired thickness of the dish and/or tenderness of the ingredients. We like to have very soft ingredients and a silky texture, so we let it cook for a longer time. You are welcome to find the perfect texture/consistency that suits you.
