BOSNIA & HERZEGOVINA

Kljukusa is a traditional Bosnian dish made with potatoes. It originated in Ottoman Empire, later it became one of the main parts of Bosnian cuisine and is prepared throughout the country. In the past it was mainly prepared in rural areas where after a hard day of work, large families had to be fed with just a few ingredients. In recent history this dish was  considered a delicacy, prepared before the young men were sent to the army. Today, due to its simplicity in preparation and ingredients it is often made in all kinds of households. It is one of our favorite meals, always awakening the nostalgia and childhood memories.

Kljukusa is similar to hash brownies. What sets it apart is the addition of onions. And indispensable use of the white sauce – the combination of baked potatoes, garlic and white cream is one of the kind.  The traditional recipe uses sour cream or sour yogurt and garlic. We used plant based yogurt, garlic and fresh lemon juice to add acidity.

RECIPE FOR 4 SERVINGS

INGRIDIENTS

For the Kljukusa:

  2kg potatoes, peeled 

  2 onions, peeled

  200g all-purpose flour

  1 cup of lukewarm water

  1 tsp salt 

  1/2 tsp pepper

For the Sauce:

  300g planet based yogurt

  2 garlic cloves, minced 

  1 Tbsp fresh lemon juice

  pinch of salt

  1. Preheat the oven to 200 °C and oil a large, shallow baking sheet.
  2. Shred potatoes and onions through a grater or food processor.
  3. Mix the potatoes and onions together and squeeze the mixture with your hands to release as much starch as possible.
  4. Add salt, pepper, flour and water* to the mixture. Stir until integrated.
  5. Transfer the mixture to the baking sheet and even out on all sides.
  6. Bake for up to 40 minutes, or untli the mixture turns nicely golden and crisp.
  7. Take the baking sheet out of the oven and leave it to the side to cool for a few minutes.
  8. Meanwhile, prepare the white sauce  – mix plant based yogurt, minced garlic, fresh lemon juice and salt.
  9. Break the pie apart into smaller pieces and top with white sauce.
  10. Prijatno!

NOTE!

*The water/flour formula is such that if there is too much water you add a little more flour. If there is too much flour you add a little more water. Go slowly and you’ll find the right thickness.
