Kljukusa is a traditional Bosnian dish made with potatoes. It originated in Ottoman Empire, later it became one of the main parts of Bosnian cuisine and is prepared throughout the country. In the past it was mainly prepared in rural areas where after a hard day of work, large families had to be fed with just a few ingredients. In recent history this dish was considered a delicacy, prepared before the young men were sent to the army. Today, due to its simplicity in preparation and ingredients it is often made in all kinds of households. It is one of our favorite meals, always awakening the nostalgia and childhood memories.
Kljukusa is similar to hash brownies. What sets it apart is the addition of onions. And indispensable use of the white sauce – the combination of baked potatoes, garlic and white cream is one of the kind. The traditional recipe uses sour cream or sour yogurt and garlic. We used plant based yogurt, garlic and fresh lemon juice to add acidity.
