Vegan Ground Beef

MEAT WITHOUT MEAT!

Ground beef or minced beef is beef that has been finely chopped with a knife, meat grinder, or mincing machine. It is popular as a relatively cheap and quick-cooking form of beef and it is used in many dishes.

Minced meat was probably used in Ancient Rome for the first time. Today it is part of many dishes of different world cuisines – in Italian cuisine, it is used to make meat sauces, lasagna and spaghetti bolognese, in the Middle East, it is used to make spicy kofta and meatballs and in Turkey and eastern European countries it is used in different types of stuffed vegetables. It is also used to make steak tartare, a French dish, tacos, a Mexican dish, and many other popular dishes such as hamburgers, sausages, cottage pies and meatloaf.

Making these dishes in vegan version acquires something similar in texture, color and, possibly, in taste to ground beef. Nowadays, many stores offer vegan ground beef which is usually made from soy. But you can also make it on your own. We used the recipe from Camilla’s PowerHungy, and made some minor adjustments. It is very easy to make, high in protein, free of grains, gluten, soy and nuts, and can be used in a variety of recipes from burgers, stuffed vegetables, moussaka, etc.

RECIPE FOR 1kg VEGAN GROUND BEEF

Preparation: 15 min // Cooking: +/- 20 min // Total: aprox. 30 min

INGRIDIENTS

  400g brown lentils, rinsed

 500g Beetroots, cooked, drained and cut into large chunks*

 1 small onion, cut into large chunks

  150g button mushrooms

 40g nutritional yeast

 1/3 cup flour

 1/4 cup flaxseed meal

 1 tsp garlic powder

 1,5 tsp smoked paprika

 2 tsp salt, more or less to taste

 1 tsp pepper, more or less to taste

  1. Cook lentils according to the instruction, drain and rinse under cold water.
  2. If you are using fresh beetroots, cook them, drain and rinse them under cold water. Peel the skin and cut it into larger chunks.*
  3. Put lentils, beetroots, mushrooms and onion into a food processor and process until finely chopped with only a few irregular pieces.
  4. Transfer the mixture to a larger bowl and add the rest of the ingredients. Mix everything together, taste and adjust the seasoning.
  5. Use immediately or store in the freezer for future use.

NOTE!

* You can also use canned, already cooked and pilled beetroots; just cut them into large chunks and add them to the food processor with other ingredients.
