Vegan Drumsticks

Drumstick term refers to the leg of a bird used for food. This term was used for the first time probably in the 15th century, as this part of the bird’s body as food resembled what people in the 1500s knew to be percussion drumsticks. Back then the instrument drumstick didn’t look like two straight sticks, as we know them today; they looked more like mallets. And so someone noticed the resemblance and started calling the bird’s legs drumsticks.

Drumsticks can refer to the legs of various birds, but most usually chicken legs are associated with it. Drumsticks are an important part of many traditional dishes and modern bar foods. Therefore, finding the right vegan recipe for it was a very important challenge. This recipe is from Candice and her The Edgy Veg food blog and we think it is impressive. These drumsticks are made with jackfruit and rice paper, and the resemblance is unbelievable. RECIPE FOR 24 VEGAN DRUMSTICKS

Preparation: 30 min // Cooking: 10 min // Total: 40 min

INGRIDIENTS

  4 cans of jackfruit, seeds and hard parts removed

 3 cups vegetable broth

 2 Tbsp silken tofu

  4 Tbsp tapioca starch

 1 Tbsp nutritional yeast

 2 tsp onion powder

 1 tsp garlic powder

 1 tsp dried thyme

 1 tsp dried marjoram

 1 tsp salt

 2 tsp water

 24 sheets round rice paper

  12 chopsticks, halved*

  1. In a medium size pot, mix together broth, nutritional yeast, onion powder, garlic powder, thyme, marjoram and salt.
  2. Add the jackfruit and bring it to a boil. Reduce the heat and cook for 10 minutes, stirring constantly.
  3. Reduce the heat to low and let it simmer for 10 minutes, or until all the liquid has evaporated.
  4. Remove from heat and set aside.
  5. In the meantime, whip together starch and silken tofu. Add a bit of water if the mixture is too dense. 
  6. Add this mixture to the jackfruit mixture 1 Tbsp at a time and mix until it starts to come together. 
  7. Put warm water in a large, shallow bowl and soften the rice paper by soaking each sheet for about 30 seconds.
  8. Remove the rice paper from the bowl, place it on a flat surface and using a sharp knife, cut it in half.
  9. Place 2-3 Tbsp of the jackfruit mixture onto the rice paper, place the chopstick half in the middle and cover it with the jackfruit mixture.
  10. Wrap the rice paper around the jackfruit flesh, leaving the chopstick exposed, resembling the bone.
  11. Set aside and repeat the process with the rest of the jackfruit mixture and chopsticks. 
  12. Use the vegan drumsticks for any dish you like. 

NOTE!

* You can use other objects as a “bone” – wooden spoon, ice-cream stick, or even cauliflower stem, and find what works the best for you.
